Sweet Potato Fries

Ingredients:

  • 2 large sweet potatoes
  • 2-3 Tablespoons of cornstarch
  • 2 TBSP olive oil or coconut oil

Dipping Sauce

  • 1/2 cup Mayonnaise
  • 1/4 tsp Cayenne Pepper
  • 1 tsp Sriracha Sauce

Directions:

  1. Preheat oven to 425° F.
  2. Peel and cut sweet potatoes into fries no thicker than 1/2 inch.
  3. Optional: Soak in water for minimum of one hour, but preferably for half a day.
  4. Drain potatoes and put if bowl with a lid.
  5. Add cornstarch and shake to coat potatoes with corn starch.
  6. Optional: Add oil for crispier fries and shake again.
  7. Place sweet potatoes in single layer on baking sheet lined with Parchment paper.
  8. Bake for 30 - 45 minutes until crisp flipping as needed.

Dipping Sauce

  1. Mix all ingredients and serve with fries.
